About Organic Takeover and Be Organic


We are Be Organic.  Three guys with one mission to provide a healthy alternative while educating our community and securing our place in the organic culture.

Andre Walker, Kirk Nelson, Roosevelt Desir have a goal to raise awareness about healthy-yet-tasty organic cooking alternatives. We travel around Florida taking over people’s kitchens and deliver insanely delicious organic meals. We’re taking over, one kitchen at a time.

Be Organic Catering/Personal Chef Presents: The Organic Take-Over

The Organic Take-Over was founded in 2009 by three friends out of the need for better food, better lifestyle and the observed miss-education of food throughout our communities. We strive for excellence and for many people who had the pleasure of dining with us, had the pleasure of experience this first hand.  Below are brief introductions of the founders and the chefs of Be Organic and The Organic Take-Over:

Andre Walker, 37, is a diabetic who at the time of diagnosis was in diabetic shock and wasn’t even aware of illness. Now Walker has diabetes under control. Through a proper diet and regular (non-occupational) physical activities, Walker doesn’t need the use of insulin to manage diabetes.

Kirk Nelson, 30, is the “preventative” one in the group. By making conscious decisions Nelson uses “preventative” measures, taking the proper steps to avoid preventable illnesses, such as obesity, heart diseases, diabetes, and cancers.

Roosevelt Desir, 29, a cancer survivor, was diagnosed with Non-Hodgkin’s Lymphoma stage 4 at time of diagnosis had less than two months to live. Desir underwent bone marrow/stem cell transplant and now three years since Desir been cured.  Desir, since last treatment, incorporates a strict diet accompanied with a variety of vigorous physical actives. Desir, Nelson, and Walker’s preventative strategies are the models of what Be Organic wants people to emulate.

For several years we have been ushering in a new era of organic food and lifestyle around the state of Florida. Our mission has always been to educate our communities (Globally) while securing our place in the fabric of the organic lifestyle and culture. Our vision is to introduce and educate to the masses about incorporating and embracing a better lifestyle with the ultimate goal of helping people achieve their true self, minus impurities which is a fusion of body, mind, & soul. Meet the Be Organic Take-over Team

Andre Walker

I perceive myself as a well balanced person, willing and able to blend into any surrounding or environment. Being a writer, foodie, musical arranger, artist, poet, romantic, philosopher and father (and that’s just the short list), has given me tremendous insight into my life.

The last addition to the three-man team, I believe I bring a different-but-welcome dynamic to the group. Jamaican born and raised in the Bronx, New York, I grew up in a family unit that revolved around cooking and eating together. I am the son of a trained culinary specialist/caterer, and at a young age I had several tasks around the kitchen which ultimately fostered my passion for good food, exotic flavors and culinary technique.

I am delightfully skilled in my cooking ability and consider myself a jack of all trades in the kitchen. Away from the stove, I am always smiling and often in a good mood, but sometimes, even that has its challenges. I was recently diagnosed with mild diabetes, a genetic condition, but I refused to let it take over my spirit. I have embraced my own reality and an understanding of the regiment that comes with it. It is in this same spirit that I embark upon this journey, feeling confidence and at ease.

I joined this group knowing that I could make a difference, and this knowledge has sparked a fire in me to help others. I firmly believe that my fellow chefs and I are all “seeds in the garden” waiting to bloom into ourselves and the craft that we embody with the objective of nourishing all who are willing to partake in the BE ORGANIC movement.

Kirk Nelson

I’m always slightly challenged when it comes to talking about yours truly, so bear with me while I tell you a little about who I am.

I guess you can call me the head chef of Be Organic. At times, I can be a man of few words. But when you cook as good as I do, you don’t have to say much… my cooking says it all! And yes, I’m not only a top chef, I’m the resident comedian providing endless hours of non-stop comedic entertainment, both inside and outside of the kitchen.

Around the pots and pans, I’m known as the ‘sauce man’… just name your sauce and I got you.  While I enjoy kidding around, I’m dead serious about my work. The moment I step into the kitchen, I am focused and single-minded, displaying surgeon-like precision with my culinary skills.

I am driven by a passion and fierce determination to succeed in life, but my biggest motivation comes from my mother. Growing up as a kid in Jamaica, my mom struggled and did everything in her power to keep my siblings and I well fed. My mother is a fighter. She is tenacious and feisty with just the right amount of spunk. I’ve learned her tricks-of-the-trade in the kitchen, and in life. I am just like my mother, and I’ve incorporated that same feisty, spicy approach into our Be Organic menus. I think you’ll enjoy.

Roosevelt Desir

I am the only one of the group members native to Florida that was raised in South Florida. I grew up in a family that was raised on family cooking and eating together.

I joined Andre and Kirk, to form BE ORGANIC in 2007 after closing our organic restaurant in the Design District of Miami. I started my walk with organic food after I was diagnosed with Stage Four Non-Hodgkin’s Lymphoma in 2005. At the time of initial diagnosis I was given less than 60 days to live.  To increase my chance of survival my doctor (and friend) forbade me from eating any food that was not prepared myself and was organic.

I credit my battle with cancer to the success of living an organic lifestyle. But my diagnosed with Non-Hodgkin’s Lymphoma hasn’t stopped me from making sheer magic in the kitchen. It’s been four years since I’ve had a bone marrow transplant and I’ve been in remission living the organic life since ever since.

I bring a Haitian style of cooking to the table, along with my creative spin on recipes. I’m seen as the organized, all-work-no-play, always-here-to- listen one within the group. But don’t get it twisted… if you get in my way while I’m in the kitchen, things could get a little ugly for you. Sure, I’ll tell you about yourself, but you’ll likely end up laughing.

I am devoted to inspiring those around me and within my community to be better than they think can be. I do this through inspirational teaching and sharing in exquisite culinary delights.

I’ll admit… cooking and eating are my first and second loves respectively. Sample one of my dishes and you’ll begin to see why.
